  11. Punch the air out and turn it over. Roll it from one end, change the direction, roll again to make a ball. Pinch the seams to stick together.
  12. Put balls in the muffin pan. Let it rise at about 40℃ / 104 F (or a warm place) until doubled in size for around 30 mins. Preheat an oven to 220℃ / 428F.
  13. Gently brush them with egg. Use a small knife to slit a line, a little deep, on the surface of each.
  14. Place the cut cold butter along the slit and top with sugar. Turn down the oven to 200℃ / 392 °F and bake it for 15-20 mins until golden brown. Remove and cool on a cake rack. Done!
